About Chocolate Chip Cookies

Before we share our recipes, we wanted to honor the origins of the chocolate chip cookie. Credit for these American staples goes to Ruth Wakefield of Whitman, MA. Ruth and her husband Kenneth ran the Toll House Inn on Route 18 and Ruth kept her guests happy with warm, fresh baked cookies. One day in 1930, she was planning on making some Chocolate Butter Drop Do cookies, but she was all out of baker’s chocolate, which she would typically melt into the cookie dough. Instead, she used chopped pieces of Nestle semi-sweet chocolate which retained their shape in the oven and an instant classic was born.

In 1977, General Mills had the genius idea of turning chocolate chip cookies into a breakfast cereal. There’s no replacing the original, but we were curious if our cookies could be miniaturized and turned into cereal. Short answer: yes they can!

It’s best to start with a cold cookie. Pop your chocolate chip cookies into the freezer for about a half hour. When fully chilled, use a skewer to drill a small hole into the top of your cookie and feed a ribbon through it.

Whip together a quick buttercream frosting using 1 stick of softened butter, 2 cups of powdered sugar, 2 tablespoons of milk and scrape it into a sandwich bag.
Cut a small hole in one of the corners of the bag and use it to pipe whatever designs or messages you want on your medal. Feel free to use sprinkles or food coloring for extra specialness!

Ice Cream Cookie Sandwich Tower

Last up is our ice cream cookie sandwich tower – the most perfect way to end your Chocolate Chip Cookie Day. This super-easy dessert is so simple to make, but such a showstopper.

How to make an ice cream cookie sandwich tower

Start with chilled cookies from the freezer and a chilled quart of your favorite ice cream flavor (you can't go wrong with classic vanilla bean).

Using a long, serrated knife, cut the ice cream quart container into disks. We cut straight through the container to keep the disks looking clean and sharp. If you're ice cream is thoroughly chilled, you can just peel the cardboard off easily once your slices are cut.

Moving quickly, stack your tower with alternating cookies and ice cream disks. Once assembled, chill the tower immediately so it doesn’t melt and collapse.

Decorate your tower with sprinkles, extra whipped cream, nuts, chocolate fudge sauce, pieces of Bob Evans bacon, or strawberry jelly. Get creative!
