Ways To Make Sweet Treats Using Lemonade
There’s no better way to cool off in the summer than with a tall glass of lemonade. And, at Bob Evans, we’ve got you covered as we sell lemonade by the glass and by the gallon. Did you know that lemonade can be used to create a variety of sweet treats?
Read on for some of our favorite sweet treats you can make with lemonade.

Beverages
Back in the 1960’s golf legend Arnold Palmer’s lemonade & iced tea concoction became a summertime classic. But Arnold Palmers are just the tip of the lemonade iceberg. Lemonade adds a sweetness and sour tang to lots of beverages. One recipe we’ve been working on in the Bob Evans kitchen in our Blueberry Lemon Fizz. Fill a tall glass or mason jar with ice cubes and then ¼ cup of blueberries (either fresh or frozen blueberries will work). Then fill the glass halfway with lemon lime soda and then top it off with lemonade. Not only are these beverages refreshingly delicious, but they’re so fun and easy to make.

Lemonade Cut-Outs
Need a quick and easy treat for a (socially-distant) summer hang-out? Lemonade cut-out cookies are a snap and a fun activity for the whole family.
Ingredients:
2 sticks, room-temperature butter
½ cup, granulated sugar
¼ cup, lemonade
1 egg
3 cups, all-purpose flour
½ tsp, salt
1 tsp, baking soda
Preheat your oven to 350°. Using a stand mixer, mix the butter and sugar for 3 – 4 minutes until well combined. Add in the lemonade and egg and mix for another minute. Slowly add in the flour, salt and baking soda until your dough is just combined. Wrap your dough in plastic wrap and place it in a refrigerator to chill. After a half hour, turn your dough out onto a flour-dusted counter. Roll the dough out to ¼” thickness and use cookie cutters to cut out your cookies and place them onto parchment-paper covered baking sheets. Bake your cookies at 350° for 10 minutes.
We decorated these cookies with a lemonade glaze and crushed lemon hard candies for extra lemon flavor. (See below for lemonade glaze recipe.) But get creative with your cookies! Try frosting them and decorating with sprinkles or make them into ice cream sandwiches.

Lemon Poppy Seed Bread
If you’re looking for a summertime alternative to banana bread, try our Lemon Poppy Seed bread!
Ingredients:
½ cup, granulated sugar
Juice & zest from two lemons
½ cup milk
3 eggs
1 ½ tsp, baking powder
¼ tsp, salt
2/3 cup, vegetable oil
2 cups, all-purpose flour
¼ cup, poppy seeds
Preheat your oven to 350°. Spray an 8” loaf tin with cooking spray and, to ensure your loaf comes out neatly, line the tin with parchment paper.
Use a standing mixer to mix all of your ingredients. Once combined, fill your loaf tin, but make sure the mix only comes to about 1 – 1 ½ inches from the top of the tin, as your loaf will rise. (Note: extra batter can be used to make muffins.) Place your loaf tin on the center rack and bake at 350° for 50 – 60 minutes. Check the doneness of your bread by inserting a toothpick in the center of the loaf. The loaf is done when the toothpick comes out clean.
Once your bread is baked, turn it out onto a wire rack to cool completely and prepare your glaze.

Lemonade Glaze Ingredients
4 cups, powdered sugar
2 tbsp, lemonade
Pinch of salt
Use a stand mixer to mix these ingredients together. Your glaze should be thin enough to pour onto the loaf, but not so thin that it’s runny. Add more powdered sugar or lemonade as needed to achieve the perfect consistency.
Once your loaf is cool, set it on your cake plate and then drizzle your glaze on top. Serve on its own or with fresh berries.
